Caesar Salad
Gnocchi
No-Bake Chocolate Coconut Cookies

Caesar Salad (serves 10)

 

Ingredients

1 head romaine, lettuce depends on size
500 mL croutons 
50 mL grated Parmesan cheese

Dressing
: 

50 mL vegetable oil
25 mL grated Parmesan cheese
15 mL white, wine, vinegar
10 mL Dijon mustard
10 mL anchovy paste
2 cloves garlic, minced
3 mL each salt and pepper
2 mL  Worcestershire sauce
50 mL light mayonnaise

Method


1. Dressing: In bowl, whisk together oil, cheese, vinegar, mustard, anchovy paste, garlic, salt, pepper and Worcestershire sauce. Whisk in mayonnaise until smooth. 
 2. Tear lettuce into bite-size pieces to make about 5 Lt in large bowl. Add dressing, croutons and cheese; toss to combine.
3 In a wooden bowl if availed and sprinkle with fresh parmesan cheese
Or you may add the following
Chicken Caesar Salad: Place 4 boneless skinless chicken breasts ( or other cooked meats)
On greased grill over medium-high heat; close lid and cook, turning once, for about 12 minutes or until no longer pink inside. Slice into thin strips; add to salad.

Smoked Salmon: Place a few slices of smoked salmon over top of each salad.


Gnocchi (serves 4 to 6)

1 Kg Potatoes
1 Large
75 ml Vegetable oil
750 ml A & P flour
Pinch of salt

Method

1. Bring a pot of salted water to a boil. Peel potatoes and add to pot.
2. Cook until tender but still firm, about 15 minutes. Drain, cool and mash with a fork or potato masher.
3. Combine mashed potato, most of the flour, salt and egg in a large bowl. Knead until dough (might need more flour) forms a ball.
4. Shape small portions of the dough into long "snakes". On a floured surface, cut snakes into 1 cm pieces.
4. Bring a pot of lightly salted water to a boil.
5. Drop in gnocchi and cook for 3 to 5 minutes or until gnocchi have risen to the top; drain and serve.

Serve with Meat Sauce, Alfredo Sauce of pesto or sauce of your choice

No-Bake Chocolate Coconut Cookies (makes 2 dozen)

750 ml quick cooking oats
250 ml sweetened flaked coconut
500 ml sugar
125 ml unsweetened cocoa powder
125 ml milk
125 ml butter or margarine


Method

1. Line a baking sheet with waxed paper.
2. Mix oats and coconut in a large bowl until thoroughly combined.
3. Stir sugar, cocoa powder, milk, and margarine (or butter) together in a saucepan over medium heat until the mixture is smooth.
4. Bring to a boil and cook for 2 minutes, stirring constantly.
5. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden

Successful cooking date

                  Do you want to have a successful cooking date?

.   Follow these instructions when making dinner

Most important avoid the possibility of a mess (Barbecued ribs)

Avoid any food that might cause unpleasant ordours later (cabbage)

Do not let them chase food around the plate (sloppy Joe or sushi)

Chunk of food to large to handle (large roast in one piece)

These are just a few menu ideas the objective is to make your date

 as comfortable as possible.

June Refreshing Menu idea

Barley, Fennel, and Beet Salad

Ingredients (Serves 6)
500 ml. cooked barley (150 ml. dried)
1 thinly sliced fennel bulb
2 thinly sliced small golden beets
1/2 thinly sliced small red onion
75 gr. chopped toasted almonds
50 ml. torn fresh mint in a large bowl
75 ml. olive oil
45 ml Sherry vinegar or red wine vinegar
Salt
Pepper

Method


 Toss cooked  barley add sliced fennel bulb, sliced small golden beets,  thinly sliced small red onion, toasted almonds, and torn fresh mint in a large bowl with 1 oil and Sherry vinegar or red wine vinegar; season with salt and pepper.

Barbecue-Glazed Salmon with Green Beans and Corn
Ingredients (serve 4)
15 ml olive oil
Salt and black pepper
250 gr. frozen corn
75 ml barbecue sauce

Method

1. Set an oven rack in the highest position and heat oven to 225 C.
2. Heat the oil in a large skillet over medium-high heat. Add the green beans salt, and pepper.
3. Cook, tossing frequently, until the green beans begin to soften, 5 to 7 minutes. Add the corn and cook, tossing frequently, until the vegetables are tender, 3 to 4 minutes more. Fold in the scallion greens.
4. Meanwhile, place the salmon on a foil-lined baking sheet and season with salt and pepper.
5. Dividing evenly, brush with the barbecue sauce. Bake until cooked through, 8 to 12 minutes.
6. Serve the salmon with the vegetables and sprinkle with the basil.

Rhubarb Pie

600. ml all-purpose flour
30 ml granulated sugar
5 ml. salt
250 gr cold, butter, cubed
60 ml. ice-cold water
FILLING
1.75 gr.  Chopped fresh rhubarb, cut into
250 ml. granulated sugar
5 ml. vanilla
1 egg, beaten
15 ml water
5 ml coarse sugar

Method

1. Whirl flour with 50 gr granulated sugar and salt in a food processor.
2. Add butter. Pulse until finely crumbled. With machine still running, add water, bit at a time, and continue whirling until a ball forms, 30 sec. Divide pastry in half. Form into 2 discs. Wrap each with plastic and chill in refrigerator for 30 min.
3. Combine rhubarb with 200 gr. granulated sugar in a large saucepan and set over high. Boil, and then reduce heat to medium. Cook, stirring often, until mixture is very thick and reduced to 20 to 35 min. Stir in vanilla and cool slightly, 5 min.
4. Position rack in lower third of oven. Preheat to 190 C.
5. Beat egg with water in small bowl. On a lightly floured surface, roll out 1 pastry disc into a circle. Lift onto a pie pan set on a baking sheet. Press dough over bottom and up sides of pan, leaving 2 to 3 cm, and overhang. Scrape rhubarb mixture into pastry. Brush overhang with egg wash. Roll out second pastry disc into a circle,plkace on top of pie dish.
6.Brush with egg wash sprinkle with coarse sugar. Bake in lower third of oven until golden brown, 50 to 60 min.  Cool completely, 1 hour.
7. Serve with Vanilla Ice Cream
